how do you usually behave to be assured they will actually pay your work?

do you ask a down payment? a cash advance? and if yes, when: just after you received the translation, with half work already done or with the entire translation still to be done?

I wrote my question in a bad way, I meant that even in Italy I don't know what kind of proposal to do in order to be sure I will receive the payment! anyhow, another collegue made me think that even the client cannot be sure I will hand him the translation and that the translation will be well done. So... we can just hope
